So, I was in the mood to make my own bread yesterday. It’s a lot easier than it’s made out to be , and cheaper than buying bread at the store. You can make them plain or add any herbs/flavorings you want; I chose honey-oat because I’ve been on a honey kick ever since I made Baklava.
Please note that these instructions are for using a stand mixer, not a bread machine or (heaven forbid) for kneading by hand. I don’t have the intestinal fortitude for that sort of thing.
To make approximately 6 rolls, you will need:
- 10 ounces (about 2 cups) of bread flour (all-purpose works fine)
- 6 ounces water
- 1 tsp yeast
- 1 tsp salt
- 3 tbs honey
- 2 tbs butter (melted)
- 1 tbs oats
This is the bread flour I used, but you can use all-purpose flour instead.
Also, if you have a kitchen scale, it’s really handy for baking when measurements need to be more precise. But if you don’t have one, that’s OK too. I think mine cost around $20 from Amazon. I originally bought it for selling and shipping stuff on eBay, but it’s nice to have around in the kitchen!
First, let the yeast get to working. Follow the instructions on the yeast packet. I had to add the yeast to warm water and let it set for 15 minutes, or until it started to foam a little. You can also buy “fast rising” yeast that doesn’t take as long.
Here it is after it has begun to foam a bit. Please excuse the blurry pic; it was a cloudy day, and I couldn’t get a clear pic to save my life.
Add 2 tbs of the honey here and stir it up until dissolved.
Now, in the bowl of the mixer, combine the water/yeast/honey mixture and the salt with the flour.
Using the paddle attachment (shown), mix on low just until combined.
Now, switch to the dough hook attachment and mix on medium for 8 minutes.
“Arrrrrr! I’m a pirate!” When my husband got home, he asked me why I needed a pirate hook for cooking. No lie. XD
The dough should like like this.
Cover the bowl with plastic wrap and set aside for about 3 hours, or until the dough has doubled in size. You can leave it in the fridge overnight, if you wish.
Here’s the dough after it has risen. Nice and puffy!
Once you are ready to bake the rolls, preheat the oven to 400 degrees F.
Remove the dough from the bowl, and place on a floured work surface.
Pull off small sections and shape into balls; place a couple inches apart on a baking sheet.
Brush each roll with some of the melted butter.
Bake for 10 minutes, then reduce the heat to 350 degrees F and bake for an additional 10-15 minutes (or until the rolls are golden brown and cooked through).
Oops. One of them split on me, but I think it’s pretty. I think that’s supposed to be a sign of using too much flour? Oh well, they were tasty anyway.
Add the remaining honey to the melted butter mixture, and brush over each roll with a pastry brush. Sprinkle with oats.
