
Post 5 of 12 in my 12 Days of Christmas Recipes Series – Chocolate Mint Chip Cookies
These cookies are the essence of Andes Mints in cookie form, according to my husband. You could use chocolate chips instead if you aren’t a fan of Andes mints, or white chocolate chips, or walnuts, or… you get the idea. The cookie batter in this recipe is pretty basic, and you can add just about anything you want to it. You can omit the cocoa and add in a touch more flour to make standard chocolate chip cookies. The possibilities are endless!
To make 10-12 cookies, you will need:
- 1/2 cup butter (melted if you want the cookies to spread a lot, like mine; softened if you want them to be puffier)
- 2/3 cup white granulated sugar
- 1/3 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1c flour
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/4c milk
- 1 10-ounce bag of Andes mint chips
Begin by preheating the oven to 350 degrees F. Line a baking sheet with parchment paper for easy cleanup.
In a large bowl, mix the sugars and butter with an electric mixer on medium for about 3 minutes, until thoroughly combined. Add in the milk, egg and vanilla, and mix on low for an additional minute.
In a separate medium bowl, whisk together the cocoa powder, flour, baking soda, baking powder, and salt.
With the mixer on low, add the dry mixture to the wet mixture; mix until combined. Add the mint chips and mix until just combined.
Using a cookie scoop or rounded tablespoons, spoon the cookies out onto the prepared baking sheet, leaving 1.5 inches between cookies.
Bake for 7-9 minutes, or until the edges of the cookie are firm and the center is set. Let the cookies cool for about an hour (if you can stand it). After the cookies have cooled, they will be firmer and easier to handle.
Also, my apologies for the lack of detailed photos in this post. I was doing a lot of experimenting to get the cookies to spread correctly, and didn’t always remember to get the picture.
