Post 12 of 12 in my 12 Days of Christmas Recipes Series – Butterscotch Haystack Cookies

The first time I tried these “cookies,” they were in a gift box of delicious goodies prepared by my good friend Nate. (You can find some of his other fab creations over at his blog, Highly Reactive). This was a couple of years ago, and I was still rather inexperienced in the kitchen. Well, more inexperienced than I am now… not saying that I’m not still inexperienced. Because I am, you know. Confused? Me, too. Moral of the story? I’m a noob.

Anyway. Back to the point. My husband and I almost divorced over who got to eat the last of these haystacks when Nate sent us the first batch. Luckily, Nate informed me how easy they were to make, so our marriage was saved.

This recipe makes about 2 cookie sheets’ worth of haystacks – around 30 cookies.

You will need:

  • 1 11-ounce bag of butterscotch chips
  • 2 tbs peanut butter (creamy)
  • 1 cup of peanuts, shelled
  • 3.5-4 cups of chow mein noodles (6 ounces by weight)

First, prepare two cookie sheets by lining them with wax paper.

Pour the butterscotch chips into a medium microwave-safe bowl.

Microwave on medium power in 30-second intervals, stirring each time, until the chips are melted. Add in the peanut butter, and stir to combine.

Fold the peanuts and chow mein noodles into the melted butterscotch chips until the butterscotch mixture is evenly distributed to the chow mein noodles and peanuts.

Like so!

Working quickly, scoop out heaping tablespoons of the mixture onto your prepared cookie sheets. Let rest until hardened.

Tip: To speed up the process, pop the entire cookie sheet into the fridge for 20 minutes.
