Tomato-Basil Bruschetta

I needed a snack today, and we had a tomato in the fridge that needed used up as well as some tasty looking whole-grain bread. And a basil plant on the deck.  So this recipe was born.

For 1 serving/snack, you will need:

  • 2 slices whole-grain bread
  • 1/2 of a medium to large tomato
  • 1 garlic clove
  • 2 tsp olive oil
  • 1/2 tsp balsamic vinegar
  • 2 tsp fresh chopped basil
  • salt and black pepper
  • (optional) a few crumbles of feta cheese

First, pre-heat your oven to 425°F. Bake the slices of bread on a baking sheet for 6 minutes, or until toasted.

After toasting the bread, slice the garlic clove in half and rub the sliced side against the top side of each bread slice.

Drizzle each slice of toast with approximately 1/2 tsp olive oil.

Dice the tomato into small cubes and place into a small bowl.

Finely chop the basil and place into the bowl with tomatoes.

Add in the balsamic vinegar and remaining olive oil. Toss to combine.

Season with a little salt and ground black pepper. Enjoy! 🙂

You could also add some crumbled feta cheese, or even shredded mozzarella.
